Kerry Oh Kay!

Some people travel to exotic places or have a romantic dinner over candlelight to celebrate their anniversary. Me and David? We invite our two favorite people on the Central Coast over for dinner and some 80's karaoke.

Our friends Ken and Katie came over Saturday night and I made my new favorite easy-peezy meal! My mother-in-law Irma's good friend and neighbor made this Chicken Tamale Casserole when we were up in Brush Prairie over Easter weekend. It is seriously so easy to make and tastes delicious. I also pulled out all the stops and made a batch of Brookies (a chocolate chip cookie with a brownie in the middle) for dessert. Oh my gosh, you guys, I seriously thought I had died and gone to heaven when I finally ate mine last night. I got the recipe off of Bakerella's website and my first batch didn't turn out to be very pretty, but I'm sure they still tasted good.



In case you make these yourself, learn from my mistake! I made the brownies in an 8x8 pan, so they were fairly thick. In order for the cookie to completely surround them, they need to really be smooshed down so they don't bulge out of the middle (THAT'S WHAT SHE SAID!). My second batch looked a lot better.



Eight Brookies is all it makes. One is all you need.

After we stuffed ourselves, we pulled out the 80s karaoke game and realized we didn't have the right microphones for it. We were bummed, but FEAR NOT, there were 80s songs to be sung on the American Idol game. I put Olivia to bed and came out to find Ken belting it out.



Katie, why are you laughing?




Oh Ken, are you singing Celine Dion? You are.



David rocked it out a few times.


And so did Katie.

I did too, but I kept my hands tight on my camera.


Best part of the night right here. Ken singing AND dancing to Michael Jackson's Beat It.

We love this couple.

I don't know which one is the "sweeter" looking, Olivia or those delicious looking Brookies? Oh my gosh I could eat those up and her too.
